Oolong tea is half processed tea. That means the tea is half fermented during the procession, then high temperature is used to stop the ferment. Usually people used big-leaf tea to produce Oolong Tea (small-leaf tea is used for green tea and scent tea). The tea leaves usually start ferment from the out borders therefore the color will change to brown or red. When the ferment is stopped the tea leaves have a distinctive "green leaves with red borders" appearance.
Oolong tea is used in South East China such as the Fujian and Taiwan Provinces, where the Gong Fu Tea ceremoney is very popular. It is also well accepted all over China in the recent years. Oolong tea is also made into compressed tea bricks and transported to the remote areas such as Yunan and Mongolia as a major resource of the vitamin C.
