The leaf buds are picked very early in Spring and the very best quality white tea is made only from these immature buds. Lesser quality white tea often has some leaves mixed in with the buds. These buds are covered with a very fine hair which becomes white as it dries and this is what gives the tea its name.
Green tea has become very popular these days due to its high antioxidant content, and also of course because it is a very pleasing beverage to drink. White tea has even more benefits than green tea since it contains large quantities of powerful antioxidants known as polyphenols. Drinking tea of any kind is very healthful, and white tea is the supreme tea for this purpose.

White tea has a mild and slightly sweet flavor. This is a result of the very little processing which is used in producing it which forms a high concentration of flavonoids. White tea is best when used without the addition of sweeteners which will only serve to mask its delicate flavor.
