1 3/4 cups of all purpose flour
1 cup of sugar (white)
1 teaspoon of baking powder
teaspoon baking soda
1 teaspoon ground cinnamon
2 large eggs
1 cup melted butter
3 large bananas, mashed very well
1 teaspoon vanilla extract
Pre-heat the oven to 350 degrees Fahrenheit or about 180 degrees Celsius. Grease and sprinkle some flour on to the loaf pan. Set aside. In a bowl stir all the dry ingredients; the sugar, flour, baking powder, baking soda, salt, and cinnamon until they are well mixed.
In a separate large bowl, mix together the melted butter, mashed bananas, then the eggs and vanilla. Mix well until you have a smooth batter. Using a rubber spatula or spoon, carefully fold the batter to the dry ingredients. Stir until combined and the batter is thick. Do not over blend as this will result to hard and chewy bread. Pour in the batter to the baking pan. Put in the oven and bake until the bread is golden brown. One tip to make sure the bread is fully baked is to insert a knife into the loaf, if the knife comes out clean, the bread is done. Leave the bread to cool before removing it from the pan. You can either serve it warm or cool thoroughly to prevent it from crumbing. Serve the banana bread in thick slices on its own or spread with honey or butter. If you intend to serve it the following day, put it in the fridge to preserve flavor.
