prepare Butternut Squash and Leeks Soup, Asian Slaw with Peanut

Butternut squash Soup with Leeks

Method: Put in the steel blade. While the appliance is running, drop
the garlic through the feed tube and process to mince. Scrape the
plastic bowl and add in the leeks, pulse ten times.

To soften the vegetables, sweat over medium low heat. Stir once in a while so as to not to brown the veggies.

Peel and seed the crush ; cut to fit the feed tube. Cut the mash.

Add the sliced squish into the stockpot with the leeks and garlic ; stir well. Add the salt and pepper.

Add the wine to the pot. Bring to the boil and let the wine reduce by
half. Bring soup to a low boil. Lower heat and let simmer till squash
is very soft and is simply pierced with a knife, about twenty minutes.

Pass through a strain to separate the solids from the liquid, set aside
the cooking liquid. Put half of the cooking liquid to a clean cooking
pot and set aside. You may need to do this in two batches, so put the
solids first to the food processor and process to puree for about 2 to
3 minutes. Scrape the work bowl to be sure the mixture is homogenous.
Put back the pureed solids to the cooking liquid and mix well to
combine. Pour in the lemon extract. Blend in reserved cooking liquid to
get the desired consistency. Taste and adjust seasoning if necessary.
If heavy cream is to be use, add in last and reheat to a simmer.

Asian Slaw with Peanut Dressing

Directions: Place in the steel blade. For about ten times, pulse to
chop the peanuts. Remove and set aside. While the unit is running, put
in the garlic and ginger down the feed tube to chop. Scrape the plastic
bowl and process for five seconds more. Include the peanut butter,
sugar, rice vinegar, hoisin sauce, sesame oil, and tamari. Process for
ten seconds or until smooth. Clean the work bowl. While the unit is
running, pour the oil slowly through the small feed tube. For just
about ten to fifteen seconds, process until emulsified. Take it out and
set aside. The dressing may be prepared several days in advance. Let
remain for thirty minutes at room temp before using.

Clean the processor bowl, and then install the shredding disc. Put
together the radishes in the big feed tube, slice side down, and shred.
Do the same with the carrots as well as with the cut up broccoli stem.
Place all the shredded vegetables to a big serving bowl.

Put in the cutting disc. Place the Napa cabbage horizontally in the
feed tube and cut. Place the bok choy in the feed tube and slice.
Combine all the vegetables and add the snow peas. Pour the prepared
dressing over the mixed veggies and toss well.
